With fresh south-west
flavour, the Hominy and
Chorizo Chili,
below,
is made
with spicy chorizo, a sausage
spiked with chilli powder and
garlic. Carrots, peppers, and
cherry tomatoes bring a
lighter touch. Com hominy is
a tasty stand-in for beans. A
good substitute is dried
m akki
or com kernels that
are reconstituted and cooked.
To tempt the serious chili-
head, Texas Red,
right,
is
all meat, no beans. “It’s a
man’s chili,” one taster said
about the mix of lean ground
lamb or mutton and thick-cut
bacon simmered in a garlic-
laden broth. Just before
serving, top it with Cheddar
cheese wedges.
An all-time favourite, Game
Day Chili,
bottom right,
will
secure your chili-master
reputation— whether served
in office or at home. Dried
plums sweeten and thicken
the mix while balancing
the spiciness.
